Veg Macaroni Recipe

Veg Macaroni is a perfect lunch time or evening snack for your children. You can add an assortment of vegetables, depending on what your child likes. Delicious, quick & easy to make meal for kids.

2 cups Macaroni Pasta
1/2 cup carrots finely chopped
2 tsp Lemon juice
1 tbsp red chilli powder
Salt as per taste
4-5 tsp Oil
2-3 tbsp Tomato sauce
little Mustard seeds
Curry Leaves few
asafoetida powder a pinch
coriander leaves few
Optional
1/4 cup onions chopped
1/4 cup capsicum chopped
2 tblsp Spring onions to garnish
Heat a pan of salted water over medium flame. Add the macaroni pasta and cook until aldente. Drain well and keep aside. Heat oil in a pan over medium flame. Fry the mustard seeds, curry leaves and asafoetida powder for 30 seconds. Add the carrots, macaroni, tomato sauce, red chilli powder and stir well. Cook for a minute or two. Remove from flame and add lemon juice. Mix well and garnish with coriander leaves. Serve at once.
