1/2 cup cashews ( soaked overnight and drained )
1/3 cup lemon juice
3 tablespoons olive oil
1 teaspoon dijon mustard
1 teaspoon capers with brine
1 clove garlic ( chopped finely )
1/4 teaspoon sea salt
black pepper to taste
