This Vegan Cashew Lemon Mousse recipe is super refreshing, has a strong lemon flavor, and is super creamy.

200 g raw cashews
1 lemon (zest)
1 lemon (juice)
3 tablespoons maple syrup
90 ml water
1/4 teaspoon turmeric
4 cups water (to soak cashews)
  • Soak the cashews in 4 cups of water for at least 2 hours. We left ours overnight. When done, drain and rinse the cashews.
