If you love chocolate this is the best Vegan Chocolate Cheesecake we've ever made. It's super creamy, delicious, perfectly sweetened, and incredibly delicious!

For the Crust::
150 g roasted almonds
2 tablespoons raw cacao powder
50 g maple syrup
For the Filling::
180 g raw cashews
60 ml water
140 ml maple syrup
1 tablespoon fresh lemon juice
1 teaspoon vanilla paste or extract
2 tablespoons coconut sugar
35 g raw cacao powder
100 g melted raw cacao butter
  • Soak cashews in water overnight or for at least 4 hour. When done drain, rinse and set aside.
