Vegan Cornbread Pancakes
I love all types of pancakes, from classic to fruit filled. But I also like savory pancakes, like these cornbread pancakes. They are a cross between fluffy pancakes and savory crumbly cornbread. They taste great as a lazy weekend breakfast or even as a breakfast for dinner. Serve warm with vegan butter and your favorite syrup, I like to serve them with blueberry or maple syrup. With a crispycrumbly outside and fluffy tender inside, these pancakes will become a weekend breakfast favorite.
1 tablespoon apple cider vinegar
1 cup all-purpose flour
1 cup cornmeal
2 tablespoons granulated sugar
1 tablespoon cornstarch
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup olive oil
