Are you craving for a delicious but also very healthy meal?Our Vegan Lentil Mixed Greens Salad is a great option for dinner or as a side dish.

1 cup cooked lentils
1 cup mixed greens
1/2 medium size tomato
1/3 cup cucumber
1 tablespoon chickpeas
Dressing:
1 tablespoon of extra virgin olive oil
1 tablespoon Apple cider vinegar
pinch of oregano
  • How to cook lentils: In a medium-size pot add 3 cups of water and 1 cup of lentils. Bring to boil, then reduce the heat and cook for about 15-20 minutes until tender. Let them cool.

water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)
