16 oz crushed pineapple 2 t sugar 4 c peeled and grated carrots 1 c raisins 1/4 c plain Greek yogurt ( or sour cream ) 1/4 c mayonnaise 1 t fresh lemon juice 1/4 t salt
Place pineapple in a large bowl. Stir in sugar until it dissolves in the pineapple juice.
Add carrots, raisins, yogurt, mayonnaise, lemon juice and salt. Stir until just combined.
