Vegan Portobello Mushroom Burgers are marinated and broiled to juicy perfection for a hearty, satisfying, intensely umami flavor. And the cheddar sauce—it's TO DIE FOR.

Marinade:
1/2 cup red wine or veggie stock
1/4 cup low sodium soy sauce or tamari if gluten free
1 tablespoon miso paste
4 garlic cloves
Cheddar Sauce:
1 cup cashews ( soaked overnight )
3/4 cup low sodium vegetable broth
2 tablespoons apple cider vinegar
1/8 cup nutritional yeast
1 tablespoon tomato paste
1 teaspoon vegan Worcestershire sauce
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
Other Ingredients:
4 large portobello mushrooms
1 red onion
4 whole grain hamburger bunds
toppings of choice
