Vegan Pumpkin Blondies! Easy Nut Butter Pumpkin Blondies with Pecans and chocolate chips. No Added oil. Nutfree Gluten-free option

pumpkin puree :
1/3 cup pumpkin puree
1/3 cup nut butter ( smooth, such as almond, cashew or peanut )
1 tsp vanilla extract
1/4 cup maple syrup
2 tbsp sugar
3/2 tsp pumpkin pie spice
3/4 cup flour
1/2 cup almond flour
1/2 tsp baking powder
1/4 tsp salt
2/3 cups chocolate chips ( chopped pecans, dried fruit or other nuts or seeds, plus more for topping )

This recipe has everything you love in a no bake cheesecake; a crumbly graham cracker crust, delicious creamy filling and bright cherries on top. This is by far a favorite recipe of mine and I'm always sad when it's gone. You're gonna love this cheesecake!

For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup packed brown sugar
1/2 tsp cinnamon ( optional )
7 tbsp butter ( melted )
For the Filling:
1 cup whipping cream
1 1/2 tbsp sugar
1/4 tsp vanilla
1 1/2 cups marshmallows
4 oz cream cheese
2 tbsp dark brown sugar ( plus 2 tsp )
1/2 cup milk ( plus 6 tbsp )
1/2 package cheesecake instant pudding mix
