Vegan Tamale Pie
Vegan tamale pie is the perfect recipe for those times when you are searching for healthy, easy, satisfying comfort food.
1 green bell pepper diced
1 tbsp. chili powder
1 tsp. cumin
1/2 tsp. salt
1/2 tsp. ground black pepper
1 cup dry green or brown lentils
2 1/2 cups water or vegetable broth
2 cups tomato sauce, tomato puree
15 oz. can black beans or kidney beans
10 oz. can corn
1 tbsp. ground chia seeds
3 tbsp. water
1 1/2 cups corn meal
2 tbsp. flour
1 1/2 tsp. baking powder
1 cup plant milk ( oat or almond )
