1 zucchini
1 cup tomato sauce
250 g vegan ricotta cheese
3 slices any vegan cheese
2 cups fresh spinach
1 tablespoon olive oil
1/3 teaspoon salt
2/3 teaspoon dried oregano
  • Preheat the oven to 350°F (180°C). Grease the ovenproof dish with the olive oil. Set aside.
  • In a large sauce pan add 2 tablespoons of water and spinach, cover and cook for about 3-4 minutes....
