Quick and easy Vegetable Hash with a Fried Egg - perfect side or brunch dish.

4 medium carrots
4 medium turnips
1 yellow onion
2 garlic cloves
2-3 tablespoons vegetable oil
Salt, pepper, to taste
1/4 teaspoon dried oregano
2 tablespoons fresh herbs, such as parsley, basil, or cilantro ( for garnish )
4-6 Eggs for frying (see recipe)
