This vegetable lasagna is layers of noodles, veggies, marinara sauce and three different kinds of cheese, all baked to golden brown perfection. A vegetarian main course option that's perfect for feeding a crowd.

For the sauce :
1 tbsp olive oil
1/2 cup onion ( finely diced )
3/4 cups carrots ( peeled and finely diced )
1 cup zucchini ( finely diced )
3/4 cup yellow squash ( finely diced )
1 red bell pepper ( cored, seeded and finely diced )
5 ounce bag baby spinach leaves
salt and pepper to taste
2 tsp garlic ( minced )
24 ounce jar marinara sauce
8 ounce can tomato sauce
For the filling:
15 ounces ricotta cheese
2 eggs
3/4 cup grated parmesan cheese
1 cup shredded mozzarella cheese
1/2 tsp salt
1/4 tsp pepper
1/2 tsp Italian seasoning
For assembly:
1 box of lasagna noodles
2 cups shredded mozzarella cheese
cooking spray
2 tbsp chopped parsley
