This amazing meatless Vegetable Lasagna is layered with smooth ricotta cheese, sautéed vegetables like mushrooms, zucchini, bell peppers, and spinach, mozzarella cheese, and marinara all baked to golden perfection.

1 large egg
1/2 cup grated Parmesan
1 cup shredded mozzarella
1 teaspoon Italian Seasoning

2 tablespoons olive oil
1 tablespoon unsalted butter
1 medium onion chopped
8 ounces mushrooms thick sliced
1 zucchini sliced half moons
1 sweet red bell pepper finely diced
3 cloves garlic minced
4 cups spinach
15 no boil lasagna noodles
24 ounces marinara
