Vegetable Lentil Soup

Is there anything cozier and comfier then eating delicious warm soup in these cold winter days? Today we are sharing with you our absolute favorite soup ever - Vegetable Lentil Soup.

1/2 cup red lentils
1/2 cup brown/green lentils
2 carrots (chopped)
2 chopped white potatoes
1/2 purple onion (chopped)
1/2 cup fresh parsley (chopped)
4 tablespoons thick tomato puree
1/3 teaspoon ground black pepper
1/3 teaspoon Himalayan salt
1 1/2 vegan bouillon cube (palm oil-free)
2 cups fresh baby spinach
1 tablespoon olive oil
1000 ml of water
