Vegetable Tortellini Soup

Hearty, Infused with Italian Flavor and full of Vegetables!

1 packet tortellini
1 medium slice onion (diced)
1 can petite diced of tomatoes (drained)
1 Medium garlic glove (minced)
2 cups carrots (rinsed and sliced)
1 cup celery (rinsed and sliced)
1 Medium zucunini (peeled and diced)
8 cups chicken broth (* or vegetable broth to make it vegetarian)
1/2 teaspoon ground black pepper
1 tablespoon dried parsley
1-2 Medium bay leaf
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 cup fresh paremesan reggiano
In a large saucepan bring broth and herbs to a boil. Add vegetables and boil over medium heat until carrots are tender about 10-15 minutes. Add tortellini and simmer for an additional 7-8 minutes. Serve...
