Vegetarian pesto courgette n’ carrot noodles with feta cheese and olives

Try this super refreshing vegetarian pesto courgette n' carrot with feta cheese salad as a side to a BBQ or simply as a meat gateaway.

3 courgettes ( shredded or spiralised )
3 medium carrots ( shredded or spiralised )
200 g feta cheese
10 green pitted olives
pinch dry Italian mixed herbs
1 tbsp sesame seeds (mixed)
1 tbsp olive oil
2 tbsp pesto sauce ( optional )
3 tbsp cider vinegar
1/2 tsp dry oregano
1 tsp honey
pinch salt pink Himalayan ( tiny pinch )
1 tbsp lemon juice
  1. Place all the ingredients for the vinaigrette into a jar. Place the lid on and give it all a good old shake.
  2. Wash the courgettes, peel and wash the carrots. Pat try and spiralise....
