The Vegetarian Taquitos are simple to make but are still full of spice and loaded with potato flavor.

1 dozen tortillas, warmed
1 tablespoon butter
1 large potatoes, diced (about 2 cups)
1 package soyrizo
1 green onion, chopped
1/2 cup sweet corn
1 tsp. hot sauce
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. cumin
1/4 tsp. chili powder
1 1/2 cups mexican shredded cheese been
1/4 cup oil
1/2 cup guacamole
1/4 cup sour cream
1 lime, quartered
12 toothpicks, if needed
