veggie burger salad
Before the blog, I was known for making super extravagant salads at lunch time. I would roast and saute veggies and make super yummy concoctions, while Tiara was sleeping. Once she woke up from her nap everything would be done and we would sit down and eat lunch together. Lately, I haven’t wanted to waste my free time making fancy salads, but I still love to eat salads and I hate to buy them pre -done, so this is my newest 2 minute lunch. I think it is really healthy and it really fills me

one frozen Trader Joe’s veggie patty, or any brand you like
2 big handfuls of pre -washed mixed greens or arugula. I alternative every other day so I don’t get bored.
crumbled feta or goat cheese. Love them both and use which ever I am most in the mood for.
olive oil about 3 Tablespoons
balsamic vinegar about 1 tablespoon
pine-nuts or

Put the patty in the microwave for 2 minutes. Throw the lettuce in a bowl, add the cheese, and add either avocado or pine nuts. I think it is too rich if you use them both together so I use which ever one...
