Vietnamese Chicken Sandwich (Banh Mi)

This Banh Mi sandwich is packed with flavor from the chicken rub, pickled carrots and cucumber and cilantro. The homemade sauce you spread on the rolls is fantastic!

2 small boneless, skinless chicken breasts
1/4 tsp each of garlic powder, smoked paprika and cayenne pepper
2 Tbsp rice vinegar
1/2 cup water
dash of salt
2 carrots, peeled and sliced into matchsticks
1 cucumber, sliced into thin rings
1/2 bunch of cilantro
3 Tbsp mayonnaise
2 Tbsp hoisin sauce
1/2 tsp sriracha hot sauce
2 crusty french style rolls (or Banh Mi Rolls if you can find them)
