2 tbsp. Grapeseed Oil
4 lbs. Brussels Sprouts ( cut lengthwise through the core into 1/4 inch strips )
1 Sweet Onion ( julienned )
1/2 cup Flour
3 tbsp. Butter
4 Garlic Cloves ( minced )
5 cups Milk
1 tbsp. Hot Sauce
8 oz. White Cheddar Cheese ( shredded )
4 oz. Parmesan Cheese ( shredded )
Kosher Salt ( to season )
Freshly Ground Black Pepper ( to season )
