The ground beef mixture is sculpted on skewers, grilled, and placed on a bed of flat leaf parsley, tomatoes, cucumber, and feta cheese. Beef Koftas:
2 lbs. Double 8 Cattle Company Fullblood Wagyu Ground Beef
1 Small Onion ( finely minced or grated )
3 Garlic Cloves ( minced )
1 tsp. Kosher Salt
1/2 tsp. Black Pepper
1 1/2 tsp. Ground Cumin
1 1/2 tsp. Oregano
1 1/2 tsp. Sumac
1/4 tsp. Cayenne Pepper
1/2 tsp. Cinnamon
Tzatziki Sauce:
1 cup Greek Yogurt ( plain )
1 cup Cucumber ( grated on the large holes of a box grater )
3 Garlic Cloves ( minced )
1 Lemon ( zested and juiced )
1/2 tsp. Black Pepper
1 tsp. Kosher Salt
2 tbsp. Fresh Dill ( minced )
Assembly :
2 Roma Tomatoes ( cut into bite-size pieces )
1 Small Red Onion ( finely julienned )
1/2 Cucumber ( cut into bite-size pieces )
1 BUNCH Flat Leaf Parsley ( stems removed )
1 cup Crumbled Feta Cheese
6 PIECE Pita Bread

FIRST STEPS
