1 Double 8 Cattle Company Fullblood Wagyu Bottom Round Roast ( cut into 1 inch cubes )
3 tbsp Corn Starch
2 tsp Kosher Salt
1/2 tsp Black Pepper
4 tbsp Grapeseed Oil
2 cups Beef Stock
2 cans Coconut Milk ( full fat )
1 lb Baby Yellow Potatoes ( cut in half )
Massaman Curry Paste:
4 Fresno Chiles ( seeded and diced )
1 Large Red Onion ( diced )
1 tbsp Cumin
1 tbsp Coriander
1/2 tsp Cinnamon
1/2 tsp Black Pepper
4-5 Garlic Cloves
3 Stalks Lemongrass ( remove and discard outer leaves and dice the inner soft pieces )
1 tbsp Fresh Ginger ( minced )
2 tsp Shrimp Paste
1/4 cup Fish Sauce
1 Bunch Cilantro ( leaves and stems minced )
1 tsp Kosher Salt
1 tbsp Palm Sugar
2 Limes ( zested and juiced )
1/4 cup Water
Jasmine Rice:
3 cups Water
2 tsp Kosher Salt
1 1/2 cup Jasmine Rice
Garnish:
2 Fresno Chiles ( Seeded and sliced )
2 Limes ( cut into wedges )
1 cup Cilantro Leaves
