Sauce:
20 oz Crushed Tomatoes
1/2 Sweet Onion ( minced )
2 tbsp Olive Oil
1 Large Shallot ( minced )
3 Garlic Cloves ( minced )
1/2 cup Red Wine
3 tbsp Tomato Paste
1/2 cup Minced Fresh Basil
2 tsp Kosher Salt
1/2 tsp Black Pepper
Cheese:
8 slices Provolone Cheese
4 oz Fresh Mozzarella ( torn into small pieces )
Sponge:
1 1/4 cup Warm Water ( 80 degrees F )
1 1/4 tsp Instant Yeast
1 3/4 cup Bread Flour
Dough:
3/4 cup Bread Flour
1 cup Semolina Flour
2 tsp Kosher Salt
2 tbsp Extra Virgin Olive Oil
