Wagyu Filet Mignon with Mushroom Pan Sauce

Grapeseed Oil ( any high-temperature oil will work )
Freshly Ground Black Pepper
1 tbsp. Butter
1 Medium Size Shallot ( sliced )
1 cup Mushrooms ( sliced, use your mushroom of choice )
1 tbsp. Fresh Sage ( minced )
1 tbsp. Fresh Parsley ( minced )
4 oz. Dry Sherry
4 oz. Heavy Cream
