3 tablespoons Grapeseed Oil (plus additional for griddle)
1 Large Yellow Onion (julienned)
1/2 cup Dry Sherry
10 fluid ozs Fresh Baby Spinach (stems removed)
4 fluid ounces Feta Cheese
1/4 cup Parmesan Cheese (shredded)
1/3 cup Sun-Dried Tomatoes (minced)
1/3 cup Artichoke Hearts (minced)
to taste Kosher Salt
