1 Small Yellow Onion ( diced )
2 tsp. Coriander ( ground )
2 tsp. Cumin ( ground )
2 tsp. Ancho Chile Powder
1/2 tsp. Garlic ( minced )
1 1/2 tsp. Kosher Salt
Arrowroot Powder ( to roll potato balls )
Avocado Oil ( to spray potato balls )
Potatoes :
4 Russet Potatoes ( medium diced )
2 oz. Butter
1/2 cup Heavy Cream
1 1/2 tsp. Kosher Salt
2 tbsp. Arrowroot Powder
1 Egg
to taste Kosher Salt
