2 Large Yellow Onions ( julienned )
4 SPRIG Thyme ( leaves removed from stems )
1/4 cup Dry Sherry
2 tbsp. Butter
1 tsp. Kosher Salt
1/2 tsp. Freshly Ground Black Pepper

2 1/2 cups All-Purpose Flour
