3 tbsp. Grapeseed Oil ( divded )
2 Large Yellow Onions ( julienned )
4 SPRIG Thyme ( leaves removed from stems )
1/4 cup Dry Sherry
2 tbsp. Butter
1 tsp. Kosher Salt
1/2 tsp. Freshly Ground Black Pepper
4 oz. Gruyere Cheese ( grated )
2 lbs. Heirloom or Roma Tomatoes ( sliced into 1/4-inch-thick slices )
2 oz. Fresh Basil Leaves ( chiffonade )
1 Egg ( beaten )
Galette Dough:
2 1/2 cups All-Purpose Flour
1 tsp. Kosher Salt
6 oz. Butter ( grated on the large holes of a cheese grater )
2 Egg Yolks
1/2 cup Cold Water
