This warm collard quinoa salad with fresh cherry tomatoes is a healthy great meal for lunch and dinner. It is so simple to prepare and full of nutrients.

1 cup of Quinoa
2 cups of water
½ tsp of salt
1 garlic clove, pealed
[b]For the sauté collard greens[/b]
1 bunch collard greens
3 garlic cloves, minced
½ onion, diced
1 cup cherry tomatoes
1 tsp extra olive oil
Red pepper flakes, to taste
Ground black pepper
