Watermelon is a nice addition to a salad and so refreshing.

1/2 pound baby arugula leaves
2 pounds watermelon cubes
1/4 cup extra virgin olive oil
juice of 1 large lemon
1 teaspoon kosher salt
1/2 teaspoon pepper
1/2 cup shredded parmesan cheese
2 pounds watermelon cubes
1/4 cup extra virgin olive oil
juice of 1 large lemon
1 teaspoon kosher salt
1/2 teaspoon pepper
1/2 cup shredded parmesan cheese
Place the arugula, watermelon and cheese in a large salad bowl. Whisk together in a bowl the olive oil, lemon juice, salt and pepper. Pour over the items in the bowl. Toss and serve.
