White bean & tomato wraps

Make a fresh white bean spread with oven-dried tomatoes, Balsamic vinegar, garlic and fresh basil. Add your own veggies and off you go!

1 can white beans
1 clove garlic, minced
1/2 cup sun-dried tomatoes
1 tbsp. Balsamic vinegar
1/4 cup fresh basil leaves
8 whole wheat wraps or tortillas
2 cups spinach leaves
1 red bell pepper sliced
2 cups carrots ( grated or sliced into matchsticks )
1 courgette - zucchini ( sliced thin )

To make the spread, combine the white beans, sun-dried tomatoes, garlic, Balsamic vinegar and basil in a food processor. Blend well. (makes about 1 ½ cups).
