Wild Rice Chicken Salad with Taragon

Delicious wild rice with water chestnuts, chicken, cashews and grapes! Truly a hearty and healthy salad. Gluten-free, too!

2/3 cup Mayo

1/3 cup milk

1 Tablespoon lemon juice

1/4 tsp. crushed tarragon leaves


3 cups of cubed, cooked chicken

3 cups of cooked, wild rice

1 (8 oz.) can of water chestnuts (sliced)

1/3 cup chopped green onions

1/8 tsp pepper

1/2 tsp salt
Combine these ingredients after making the dressing. Then blend in the mayo mixture and refrigerate for 3 hours or more. Before serving, add 1/2 pound of sliced, green grapes and 1 cup of salted...
