1 packet of Dashi Moto Soup stock base
1/4 cup dried bonito flakes
1/3 cup light soy sauce
1/4 cup mirin
2 Tbsp sugar
1/2 tsp rice vinegar
12 oz uncooked soba (buckwheat) noodles
1 sheet roasted nori, cut into 1 inch strips, then julienned
1/2 cup scallions, thinly sliced
1/4 cup dried bonito flakes
1/3 cup light soy sauce
1/4 cup mirin

1/2 tsp rice vinegar
12 oz uncooked soba (buckwheat) noodles

Bring 3 cups of water to a boil in a small saucepan. Add soup stock base packet, soy sauce, mirin, sugar, and rice vinegar. Let simmer over medium-high heat for about 5 minutes.
