Zucchini Chocolate Chip Coffee Cake

Zucchini chocolate chip cake, lightly sweetened with brown sugar, unsweetened applesauce, and sugar free vanilla pudding mix. Moist, flavorful, cinnamony!

For the Cake:
2 Tablespoons oil(I used olive oil)
3/4 cup(150g) packed brown sugar
1/2 cup(122g) unsweetened applesauce
1 package(4 serving size) sugar free vanilla pudding mix
2 eggs
1/4 cup water
1 1/4 cups(150g) all purpose flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons baking powder
1 cup(150g) shredded zucchini(large seeds removed)
For the Topping:
1/2 cup(100g) packed brown sugar
1 1/2 teaspoons ground cinnamon
1/3 cup(75g) mini chocolate chips(sprinkle on top)
For the cake: Preheat oven to 350 degrees. Spray a round cake pan, springform pan, or 8x8 square pan with nonstick spray and set aside. Mix the oil, 3/4 cup brown sugar, and unsweetened applesauce together...
