The Hubby and I had dinner at some friends the other night. It turned out to be an homage to a cross between Thanksgiving and Christmas. Lot’s of food and friends. For The Hubby and I it was a reunion of some people we hadn’t seen in a long time. So much fun! And yes, I did bring a Chopped. We had ham and turkey with all the fixin’s! Bowl/Baking Sheet Ingredients:
1 Red Bell Pepper, Chopped
1/2 Brown or Red Onion, Chopped
6 Brown Mushroom, Quartered
2 cups Chopped Green Beans
1 cup Yam Cubes (Chop a Yam into cubes. You don’t even have to peel it)
2 Zucchini, Chopped
1 cup Chopped Ham
1 Tablespoon Italian Seasoning of your choice
Bowl Ingredients:
1 15 oz. can of Tomato Sauce.
1 cup leftover gravy. In this case it was Turkey, but Chicken would be delish as well
2 cups cooked Quinoa
2 cups Chopped Kale
3 oz. Grated Smoked Gouda Cheese, divided
3 oz. Grated White Cheddar Cheese, divided
1 Tablespoon Italian Seasoning
2 Tablespoons Red Wine Vinegar
