Zucchini with Greek Yogurt Roasted Red Pepper Pasta Sauce

4 Medium zucchinis
to taste Kosher salt
For Sauce:
2 Roasted red peppers ( sliced )
1/2 Tbsp Olive oil
1/4 Cup Vegetable broth
to taste Salt
to taste Pepper
2 Grilled chicken breasts ( optional )
1/2 Cup low fat or fat free feta cheese
to taste Fresh basil ( diced )
1/2 cup plain greek yogurt ( plus 2 Tbsp )
1 tbsp garlic minced ( plus 1 tsp )
to taste Kosher salt
For Sauce:
2 Roasted red peppers ( sliced )
1/2 Tbsp Olive oil

To make noodles: **
Using a 5 mm julienne blade on a mandolin and slice zucchini lengthwise to make long noodles.
Toss the zucchini noodles with a good amount of salt, and let them sit in a strainer...
