Omelets can be eyeballed as far as adding vegetables, potato and cheese to it. The options are endless, and the results are delicious.

6 eggs
1/4c milk
3tb butter
4 russet potatoes diced
dash of soul seasoning
freshly ground sea salt and pepper to taste
1c shredded cheddar cheese
2tb green onions
2 tb green pepper

preheat skillet with olive oil to high and add potatoes, 1/4 c green pepper , 1/4 c onion, and freshly ground sea salt and pepper to taste, a dash of soul seasoning; brown potatoes; reduce heat and cover until tender stirring every minute or so ; You want to cook potatoes until crispy on the outside and tender on the inside.set aside;heat skillet with butter on med heat and add 6 eggs that have been beaten with milk 2 tbs green onions, 2 tbs green pepper, and 2 tbs onion and freshly ground sea salt and pepper; As omelet cooks use a spatula and gently lift edges to allow uncooked egg to flow underneath; when set add half of cheese and desired amount of potatoes;gently fold over(a couple times) top with cheese and cover until melted;gently slide omelet out of pan onto dish nice and neat.
