Fresh Strawberry Cream Filled Cookies Recipe

The pink cookie is made out of a strawberry cake mix! It's an easy recipe, but nobody needs to know that! They'll think you slaved all day in the kitchen. ;) This cookie is a winner any way you look at it! And did we mention perfect for Valentine's Day?!

15 ounces strawberry cake mix (do not bake as directed on box)
2 eggs
3/4 cup shortening

Cream Filling:
1 cup whipping cream
4 tablespoons powdered sugar
16 ounces fresh strawberries, diced
few drops red food coloring (optional)
