Roasted Corn Couscous

Roasting the garlic, corn and bell pepper takes this side dish to a whole new level! This is great to feed a crowd.

4 gar­lic cloves, roasted and chopped fine
2 tablespoons but­ter or mar­garine
1/4 teaspoon salt
1 onion, chopped and caramelized*
1 roasted red bell pep­per, minced
2 cups frozen whole ker­nel corn
1 teaspoon bal­samic vine­gar
1/4 teaspoon Mon­treal Steak Sea­son­ing
1/4 teaspoon smoked paprika
1 teaspoon chicken bouil­lon
1 cup uncooked cous­cous
1 ½ cups water
1 teaspoon chicken bouillon
