10 Minute Creamy Chicken Noodle Soup

a lightly creamy, healthy, chock-full-of-veggies, chicken noodle soup. Best for cold days, sick days, and any days in between!

1 lb boneless, skinless chicken breast, cubed
5 c. chicken broth
2 large carrots, sliced
2 celery stalks, diced
1/2 red bell pepper, diced
1/2 c. corn, fresh or frozen
2 c. frozen egg noodles
1 tsp. crushed bay leaves
1 tsp. dried thyme
salt and pepper
1 tbsp cornstarch
1/4 c. water
3/4 c. milk or half-and-half
