21 Day Fix Broccoli Mac & Cheese (AKA the perfect Mac & Cheese)

Forget that this mac is healthy and 21 Day Fix approved. It’s super-creamy, cheesy and filling, and dare I say it? The Perfect Mac & Cheese!

For the mac & cheese:
•6 cups cooked whole wheat elbow macaroni (about 3 cups dry)
•4 cups frozen broccoli florets, cooked and chopped smaller if they\'re in large pieces (a 16 oz bag ought\'a do ya)
•1 1/3 cup shredded Monterey jack cheese
•1 1/3 cup shredded sharp cheddar cheese
•1/8 - 1/4 tsp salt
•1 3/4 cup cauliflower puree

For the cauliflower puree:
•4 cups roughly chopped fresh cauliflower
•1/2 cup low sodium chicken broth
