{Alton Brown's} Chocolate Chip Cookies

A classic cookie made extra special by the use of bread four, which gives this soft cookie that desirable chew. A sure winner!

1 c. unsalted butter
2-1/4 c. bread flour
1 tsp. salt
1 tsp. baking soda
1/4 c. sugar
1-1/4 c. packed light brown sugar
1 egg
1 egg yolk
2 tbsp. milk
1-1/2 tsp. vanilla extract
2 c. semisweet chocolate chips
