Don’t find yourself in a pinch this St. Patrick’s Day! Make these Easy Andes & Mint Chocolate Chip Brownie Cups for your friends and family to enjoy!

Mint Chocolate Chip Ice Cream
Whipped Cream
1 package of Andes Mints, some whole and some chopped into pieces
1 box of your favorite fudge brownie mix (+ the ingredients that go into the brownies)
coconut oil (replace the oil in the brownie mix with the same amount of coconut oil)
1 tsp vanilla extract
