3-4 Cups Mixed Greens, Dark Leaf Lettuce, or Butter Lettuce, chopped
1 avocado, peeled and chopped
1 tomato, chopped
4 Tbsp Toasted Pine Nuts
1/2 cup Alfalfa Sprouts
1/4 cup minced Red Onion
3 Tbsp Mozzarella Cheese, grated or chopped
1-2 Chicken Breast, grilled*
1/4 cup cilantro, chopped
* I marinate the chicken in olive oil, freshly ground black pepper, dried basil, and a touch of lemon juice
Dressing
2 Tbsp White Wine Vinegar
4 Tsp dijon mustard
2 tsp honey
1 -2 cloves garlic, minced
6 Tbsp olive oil
1 avocado, peeled and chopped

Dressing
2 Tbsp White Wine Vinegar

6 Tbsp olive oil
Add all ingredients to a large salad bowl. Top with chicken cut into small pieces and toss. You can dress prior to serving or allow individuals to add the dressing to their taste.
* I marinate the chicken in olive oil, freshly ground black pepper, dried basil, and a touch of lemon juice
** chicken can be omitted for a very nice side salad or vegetarian meal.
