Apple Chicken Sausage Skillet

We love sausage with onions and peppers here. The apple chicken sausage in this variation is great. It brings a sweetness to the dish and pairs really well with the sweet peppers, sweet onions, and the crushed tomatoes! If you are look for a more \\\"fall-like\\\" approach to sausage with papers and onions, give this recipe a try!

1 tablespoon butter
1 yellow pepper
1 red pepper
1 sweet Vidalia onion
Salt and Pepper
1 8-pack apple chicken sausage
1 can diced tomatoes
Rolls
1. Slice the onion and peppers into thin strips. 2. Melt the butter in a large skillet over medium-high heat. 3. Sautee the onions and peppers in the butter for 5 minutes or so, until the onions are translucent. Salt and pepper them lightly for seasoning. 4. Put the sausages into the pan in a single layer. 5. Pour the tomatoes over the top, then cover the pan. 6. Simmer over medium heat for 15 minutes, or until the veggies are soft and the sausage is heated through. 7. Serve on rolls with a little bit of spicy mustard or as is with a side salad if you’re skipping the extra carbs.
