Fresh apricots and pecans come together in a delicious quick bread, perfect for breakfast or snacking.

2 1/4 cups finely diced fresh apricots
1 tablespoon lemon juice
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
2 tablespoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 cup milk
1/2 cup finely chopped pecans
1/4 cup rolled oats, for topping (optional)
