April's Pot Roast

Pot Roast with veggies in crock pot . Perfect weekday meal, especially as the weather cools down!

3 lb. Chuck Roast
1/4 cup vegetable oil
1 tablespoon Seasoned Salt (or a combo of salt, pepper, and garlic powder)
4 cups beef stock
1 small onion, chopped
3 bay leaves
2 cloves of garlic, crushed or minced
baby carrots (optional)
potatoes, sliced and quarted (optional)
