Arugula Spinach Salad with Feta, Cranberries & Pecans

This is a perfect winter salad that brings together those sweet and salty components we all love!

3/4 cup dried cranberries
1 1/2 cups boiling water
3 Tablespoons orange juice
1 1/2 Tablespoons pomegranate vinegar
1 1/2 teaspoons Dijon mustard
6 Tablespoons olive oil
3 Tablespoons Italian parsley, chopped
1/2 tsp salt
1/4 tsp pepper
5 oz baby arugula (1/2 package)
5 oz fresh spinach (1/2 package)
3 Persian cucumbers, peeled and sliced
1 cup pecan halves, toasted
4 oz feta cheese, crumbled
