Avocado breakfast rolls

Egg mixture rolled up with an avocado filling

1 egg, 5 egg whites, 2 tablespoons of chopped bell peppers, 2 tablespoons of chopped onions, 1/4 cup of low-skim mozzarella shredded cheese and 1/2 an avocado.
combine all ingredients except avocado into a bowl. Mix well and add salt and pepper to taste. I sometimes add garlic powder as well. Fry egg mixture on a pan cake skillet to create one sheet of eggs. In a separate bowl mash avocado add salt and pepper and spread on cooked eggs. Roll, cut (if desired) and enjoy!!
