Bacon, Cheddar cheese, and sauteed onion in this quick, easy, and good for you corn muffins.

2 slices bacon
¾ cup onion, chopped
1¼ cups buttermilk (fat-free)
¼ cup olive oil
1 egg, lightly beaten
1 cup all-purpose flour
¾ cup cornmeal
2 tsp baking powder
¼ tsp baking soda
¼ tsp salt
? tsp cayenne pepper
½ cup sharp cheddar cheese, shredded
